Dedham Farmers Market hosts a plethora of vendors, both from Dedham and surrounding communities. One of those merchants is Westwood resident Helen Coates, who originally hails from across the Atlantic.
In 2013 she founded her own business, specializing in Welsh cakes. “What is a Welsh cake?” you might ask. It is best described as a mixture of a pancake, cookie and scone. The cake itself is a finger food about the size of a thick cookie with the appearance of a pancake but with the buttery layered texture of a scone.
The traditional Welsh cake is made either with currants (a dried berry similar to a raisin) or plain, but Coates has added her own flair to enhance her creations. The eight flavors of Welsh cakes she offers are chocolate chip, blueberry & pecan, pineapple & coconut, cranberry, currant, apricot & almond, cherry & pecan, and ginger nut. She also makes three varieties of gluten free Welsh cakes, plus several flavors of Irish sweet breads.
Coates has extensive experience in crafting these treats. “I have been making them for a long time,” she said, noting that growing up in Wales, “children in Welsh schools make Welsh cakes, like Americans make cookies.” Regarding Irish sweet breads, she starts with the traditional ingredients of flour, baking soda, buttermilk and salt, then mixes in butter, sugar, raisins, currants or cranberries for extra sweetness.
She is devoted to having Copper Kettle Bakery remain a local company, saying “my hope is to continue… but not to go too far afield. I like being in this area and people are really getting to know me and my product.” Copper Kettle Bakery operates at Dedham Farmers Market on the green of First Church in Dedham every Wednesday from now through the end of October, rain or shine, from 12 to 6 p.m., and at Westwood Farmers Market on Tuesdays from now through mid-October from 1 to 6 p.m., at Saint Margaret Mary’s Church parking lot.
