It starts with a tangy and lightly sweet champagne pear vinaigrette salad dressing then add clean spinach, strawberries, and thin sliced red onion.
Top it off with a few crunchies: chopped walnuts and a bit of fresh goat cheese and you’ve got one extremely delicious side salad. Serve it as a side salad with pizza or pasta - it goes with just about everything - or serve as a main dish with grilled shrimp or chicken. You can even add watermelon and feta cheese on top.
Champagne Pear Gorgonzola Dressing:
*1 cup Canned Pears, about 4 halves
• 3 Tb. Of Liquid From the Can of Pears (both unsweetened or sweetened liquid both work)
• 1/3 cup Champagne Wine Vinegar (you can also do 50/50) *
• 1/3 cup Maple Syrup, plus more to taste-optional
• 2 tsp. Dijon Mustard AND 2 T. of Gorgonzola
NOTE: Some folks add olive oil or balsamic vinegar when done to smooth out the dressing flavor
