The lovely and vivacious Greater Boston Gala Girls just held their Loco for Local II party, and in addition to shopping for the freshest local produce at the Dedham Farmers Market, they also featured this radish bruschetta recipe, which was sure to pair well with the cucumber gimlets they made!

Radish Bruschetta Yield: 4 bruschetta
2 tablespoons sweet cream butter 2 tablespoons extra virgin olive oil 4 cloves roasted garlic, coarsely chopped
12 radishes The green tops of 12 radishes, trimmed of their stems and cleaned well - be sure to be diligent about this - dirt can be embedded in the greens, and lovely pink roots trimmed and sliced thinly
(4) 1/2-inch slices country bread or focaccia additional sweet cream butter for slathering onto the bread kosher salt freshly ground black pepper
Heat the butter and olive oil in a large saute pan over medium heat until the butter melts. Add the roasted garlic and radish greens. Saute until greens are wilted, 2 to 3 minutes. Remove from heat.
Toast or grill the bread to desired doneness. Remove from the heat and slather that additional sweet cream butter on the warm bread.
Top each slice of bread with 1/2 of the radish greens. Arrange lovely radish roots over top of the radish greens, salt and pepper to taste, and serve them forth. |
